Sciabola restaurant, my new home in Forte dei Marmi

Hotel St Mauritius Magazine Chef

A new adventure begins for me with my arrival as head chef of Sciabola, the restaurant of St. Mauritius Hotel. As soon as I discovered its elegant, glamorous and designer ambiences, I immediately thought of the perfect match that could be created with my philosophy of cuisine in which unique flavors meet the great research of aesthetics.

In my previous experience I had the pleasure, together with my staff brigade, of winning and confirming over the years the prestigious Michelin star award. With Sciabola, however, I wanted to take up a new challenge: taking care of the entire food offerings of the St.Mauritius hotel.

 In addition to the gourmet restaurant, together with my brigade we will work on both the hotel breakfast, with sweet and savory preparations by our pastry chefs, and at the Sciabola lounge bar with a food proposal for lunch and another for dinner, where you can enjoy traditional Italian dishes.

 

The Sciabola restaurant rounds out the offer by providing a journey into taste with its gourmet dishes. In addition to the a la carte, we offer two tasting menus: a six-course menu and a nine-course menu.

In the latter one, we have a chance to express my cooking philosophy to the fullest, based on the valorization of food raw materials from the Versilia area and the rediscovery of tradition with a modern twist.

There is so much about me in my cooking. My northern Italian origins and family traditions have passed on to me from an early age, a baggage that I carry over into my culinary experiences.

In my cooking philosophy, revisiting traditional dishes by reworking the ingredients is the creative process by which dishes are born.

Like "Un Ossobuco in Versilia," inspired by a family memory of my mom cooking the typical Milanese saffron risotto with stewed ossobuco, with my brigade we conceived a modern version of it. The result is a game that is revealed by tasting.
